Now that our children (and hopefully ourselves) are eating better, now we tackle the seasonal illnesses.  I have had several customers and family members with various illnesses this week.  A good diet, restful sleep pattern, regular exercise programs, and stress reduction can keep infections away.  There are several natural supplements that can boost

Home Remedy:  Cold Tonic from Jude’s Herbal Home Remedies

 

1/2 gallon filtered water                                                          3 lemons

1 ½ oz softened ginger, sliced                                                            3 oranges

½ cup organic raisins

1 cup local raw honey

 

Bring water, ginger, honey and raisins to a boil.  Lower heat; simmer for 1 hour.  Cool then strain liquid, store in tightly covered container.  Refrigerate overnight.  The next day add the juice of the lemons and oranges.  Drink 1-3 cups per day.

Save the Earth Tip

Fair Exchange- Children usually grow out of clothes and other paraphernalia well before they’re worn out.   Instead of buying everything new, lend, borrow, and swap equipment with fiends whose children are older or younger than yours.  You can also pick up secondhand bargains in good condition from thrift shops and on auction or exchange websites.  Mom to Mom sales are great resources.

 

Recipe of the Month:

 

Oatmeal, Carrot, & Apple Breakfast Muffins

Adapted from The Earthbound Cook by Myra Goodman

 

1 ¾ cup old-fashioned rolled oats                                                Topping

1 ½ cup whole spelt flour

¼ cup ground flaxseeds                                                   1 cup roasted walnut pieces

1 tablespoon baking soda                                                 1/4 cup unsweetened coconut            

1 teaspoon baking powder                                               3 tablespoons brown sugar

2 teaspoons ground cinnamon                                          1 teaspoon ground cinnamon

1/8 teaspoon Celtic sea salt

½ cup brown sugar

½ cup Rapadura (whole cane sugar)

2/3 cup extra-light olive oil

2 large free range eggs

1 ½ cup buttermilk

1 ½ cup grated peeled organic carrots

1 cup grated peeled apples

 

1.Position a rack in the center of the oven and preheat the oven to 350 degrees.  Line muffin pans with natural paper cups. 

2. Place oats, flour, flaxseeds, baking soda, baking powder, cinnamon, and salt in a medium mixing bowl and stir to combine.

3. In a large bowl, whisk together the brown sugar, Rapadura, and the oil.  Add the eggs, one at a time, beating well after each addition.  Stir in the buttermilk. 

4. Add the oat mixture to the buttermilk mixture, and stir to combine.  Add the carrots and apples, and stir just until blended.  5. Fill muffin pans with batter.

 

Topping: Place the walnuts, coconut, brown sugar, and cinnamon in a small bowl.  Stir to blend, and sprinkle the topping mixture evenly over the batter.

Bake the muffins until the batter is set and a toothpick inserted in the center of the cake comes out clean. 

Makes 24-28 muffins.
