Healthy Happenings: Wheat Belly by Dr. William Davis MD

 

I hope all of you are having a great summer.  It is funny how I have gotten so off track this summer because of my broken foot.  I tried to post a health tip on Facebook every day but lost my way for a few weeks.  Look for updates on Maurine Sharp on Facebook.  I am also going on vacation this month so I should be able to post regularly soon. 

 

As most of my customers know I limit my intake of wheat and make all of the “healthier” cookies and other baked items with organic spelt.  When my friend Sheila reported her success with weight loss using the Wheat Belly book I was intrigued.  Dr. Davis is a preventive cardiologist that has been observing the effects of wheat on his patients.

 

       Wheat Belly gives evidence linking wheat with celiac disease, other digestive disorders, arthritis, osteoporosis, diabetes, heart disease, aging-related conditions, and skin and hair problems.  Dr. Davis reports the wheat belly began in 1985 when the government campaign to reduce fat and cholesterol in the American diet.  Eliminate eggs, butter and other animal products.  The Standard American Diet (SAD) encouraged carbohydrates much of the carbohydrate items are made with GMO genetically modified grains.  The result of this SAD diet is a steady increase in obesity in men and women and now even in our children.  Davis submits that eating two slices of whole wheat bread is not much different from eating a candy bar or drinking soda pop.  All raise blood sugar very quickly.  Eating wheat for breakfast, lunch and dinner causes high insulin levels gradually leading to insulin resistance and Type 2 diabetes.

 

      What has happened to wheat?  I learned a few years ago that scientists began hybridizing wheat to increase production.  This resulted in wheat having 500 times the gluten than the traditional wheat varieties.  The plants are now genetically engineered and hybridized as “dwarf” plants that are quick growing, require less maintenance, and resist drought.  Modern wheat is higher in carbohydrates and lower in protein.

 

      Dr. Davis also implicates modern wheat as a “vigorous trigger” for the development of AGE-advanced glycation endproducts, one of the causes of cataracts, retinopathy, neuropathy, nephropathy, dementia, erectile dysfunction and other conditions associated with aging.  Dr. Davis has witnessed significant weight loss in himself and his patients just by eliminating all wheat products.  My friends’ father has great success with this program and has been able to control his Type 2 diabetes more effectively with a reduction in medications.

 

      Dr. Davis (and the Weston A. Price Foundation) recommends cooking one’s own food as a way to eliminate wheat and regain health.  His book contains many easy to cook recipes.

Save the Earth Tip

 

Strike a light!   I learned this tip while visiting Jim McDonald, herbalist. One of the simplest ways to get rid of a bad smell-in the bathroom, for example- is to strike a match and let the flame burn for a moment.  This miraculously eliminates nasty odors without the need to mask them with another, often highly packaged and processed scent.  Just make sure you extinguish the match properly before you put it in the wastebasket.

 

Recipe of the Month:

 

 

 

Zucchini Brownie 

 

 

 

1 ¾ cup spelt flour or whole wheat pastry flour         2 farm eggs

 

¼ cup ground flaxseed                                               1 cup Rapadura

 

1 ½ teaspoon baking soda                                           2 cups zucchini-grated and lightly

 

1/3 cup natural cocoa powder                                     squeezed

 

¼ cup prunes-puree (or use baby prunes)                    1/3 cup roasted walnuts-chopped

 

¼ cup extra virgin olive oil                                         1/3 cup natural chocolate chips

 

2 teaspoons vanilla extract

 

 

 

In a medium bowl, mix flour, ground flaxseed, cocoa, and baking soda.  Set aside. Combine eggs, olive oil, prunes, and vanilla with a wire whisk.  Add Rapadura to egg mixture and mix well.  Stir in dry ingredients, and then fold in zucchini until well blended, do not over mix.  Add chocolate chips and walnuts.  Spread batter into a buttered 9X13 inch baking pan.  Bake at 350 degrees for 18 to 22 minutes until toothpick comes out clean.
